Ginataang Sitaw at Kalabasa - Pork Cooked in Coconut Cream with Pumpkin and Beans

Ginataang sitaw at kalabasa this is a Filipino dish called Ginataang which means cooked with coconut milk similar to curry just omit the spices. You can either add pork, prawns / Shrimp or chicken.

This dish is quite easy to make and delicious, the creamy texture of the coconut cream makes this dish special. If you are vegetarian you can omit pork and just add your vegetable.

You can also substitute your fish sauce to shrimp paste ( bagoong ) add 2 tablespoon.

This dish best serve with steam rice or garlic rice.

Ginataang Sitaw at Kalabasa - Pork Cooked in Coconut Cream with Pumpkin and Beans

  • 1 kg pork shoulder sliced thinly
  • 300 g pumpkin cut in chunk
  • 200 g beans cut in 3 inches long
  • 150 g tomato chopped
  • 1 onion chopped
  • 4 gloves garlic minced
  • 1 1/2 tin of coconut cream set aside the ½ cup
    for later used
  • 1 Tbsp fish sauce
  • 2 tsp of chicken powder
  • 3 Tbsp Oil
  • Fresh chili optional




Instructions:

  • Heat oil in a wok over medium heat.
  • Sauté onion and garlic until softened.
  • Add pork pieces fry gently until color turns to
    medium brown.
  • Add in the fish sauce, chicken powder and one tin
    of coconut milk cover the wok and simmer for 5-8 minute or until tender.
  • Add in tomato, bean, pumpkin, and remaining ½ tin
    of coconut milk and cover, do not stir simmer for another 5 minutes.
  • Taste if you need to add more sauce and pepper
    and turn off stove.
  • Serve with rice.
