Ensaymada Recipe - Brioche

Ensaymada recipe is like Brioche is a sweet bread cover with sugar and cheese toppings, this is very soft, fluffy and cheesy bread. Ensaymada is very popular in the Philippines as a snack or dessert. And best serve with your coffee, tea or even ice cream.

Ensaymada is one of my favorite sweet bread, this is the best recipe and very easy to make. The soft and fluffy texture of the bread like brioche or croissants and the buttery taste is delightful. Try to add different variety of fillings like ube jam (purple yam), yema filling (made of thickened condensed milk), bacon or ham and cheese depends on your preference.

I made an Australian version of ensaymada similar to vegemite and cheese scroll, which made specially for my husband and for my kids which they love vegemite. This is great for lunches and snack or even for breakfast.

How to make ensaymada recipe - brioche

Ingredients to make ensaymada recipe

  • 4 cups all purpose flour sifted
  • 7 g dry yeast (1 sachet of Tandaco brand)
  • ½ cup white sugar
  • 1 tsp salt
  • 3 egg yolks
  • ¾ cup fresh milk lukewarm
  • ½ cup water lukewarm
  • ½ cup butter softened
  • extra flour for kneading

Toppings for ensaymada

  • 1/4 cup melted butter for brushing
  • 1/2 cup white sugar
  • 1 cup grated cheddar cheese

Instructions to make ensaymada

  • In a mixing bowl add together flour, sugar, salt and yeast and mix well.
  • Add in eggs, butter, milk and water use paddle attachment and mix at low speed until incorporated.
  • Change the attachment to dough hook scrape sides and mix for another 10 minutes at slow speed and just check every 3-5 minutes dough might be overflowing on the hook.
  • Scrape the sides and leave the dough in the mixing bowl and cover with a towel and allow to rest for 1 hour.
  • After 1 hour, remove the cover of the bowl and punch down the dough. Divide the dough into 10 equal portions or depends on your ensaymada molder.
  • Using a rolling pin flatten into a long rectangle, roll dough into a cylinder and twist around and tucked underneath to seal.
  • Place twisted roll into greased ensaymada mold repeat with the remaining dough.
  • Allow to raise for another 1 hour.
  • Bake in the preheat oven for 25-30 minutes 160 C
  • Bake until the tops of the bread are lightly golden brown.
  • Toppings:
  • Cool the ensaymada at room temperature then brush with butter and deep in white sugar or sprinkle the add grated cheese on top.
