Cheese and Chive Muffins

Cheese and chive muffins are healthy snack for the whole family, this savoury muffins are great on kids lunch box, or even serve with you salads or serve with your soups.

These are quick and easy to prepare and great for busy days just cut up your vegetables like chives, corn, cupsicum, zucchini, onion and any left over ham.

Savoury mini muffins are also great for parties, picnic, and can also bring to your office morning tea. This is very versatile dish that can prepare in any occasions.

This savoury muffins are best serve while it's warm.


How to Make Cheese and Chive Muffins

Ingredients to make cheese and chive muffins

  • 2 c self-raising flours
  • 1 tsp baking powder
  • ¼ tsp salt
  • 100 g grated Bega cheese
  • 30 g chives, chopped
  • 30 g red capsicum, chopped
  • 100 g ham finely chopped
  • 2 eggs
  • ¾ c milk
  • 60 g butter

To make this cheese and chive savoury muffins here are the following procedures:

  • Preheat the oven to 180°C and lightly grease muffin pan or mold.
  • In a medium bowl sift flour, baking powder and salt, set aside.
  • In another bowl using wire whisk beat together butter, eggs, and milk until combined.
  • mix in chives, capsicum, ham and cheese.
  • Using spatula fold gently the flour into the zucchini mixture until well combined. (do not over mix)
  • Pour batter into prepared muffin and bake for approximately 20-30 minutes or until done.
  • Leave muffin for 5 before transferring into wire rack.
  • Serve muffins warm.
