Ube Muffins with White Chocolate Chips
Ube muffins with white chocolate chips, this recipe is so delicious eaten warm whilst the white chocolate chips are still melting.
This is one of my favorite muffins served with hot tea or coffee, it is simply delightful.
Purple yam, also known as ube, is a root vegetable that is native to the Philippines and is popular in many Southeast Asian countries. Its vibrant purple color makes it an attractive ingredient for many dishes, and its flavor is often described as sweet and nutty.
How to make ube muffins with chocolate chips
Ingredients:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2/3 cup brown sugar
- 2/3 cup softened butter
- 3 eggs
- 1 teaspoon vanilla
- 1 cup finely grated cooked purple yam or ube halaya
- 3/4 cup plain yogurt
- 1/2 white chocolate chips
Instructions:
- Preheat the oven to 160°C. Line 6 muffin pan. Set aside.
- Sift the first four ingredients into a medium size bowl. Set aside.
- In another bowl mix ube, yogurt, and vanilla. Set aside
- In a separate bowl, cream butter and sugar until light and fluffy. Add egg one at a time, while beating continuously.
- Add sifted dry ingredients alternately with ube mixture. Add the chocolate chips and mix until combined. Refrain from mixing (The mixture should look rough or lumpy).
- Pour into prepared pan and bake for approximately 20-25 minutes or until done.
- Leave muffins in tin for 5 minutes then tip out onto cooking wires to cool completely.
- Best served while it's warm with hot drinks or ice cream.
