Homemade Chicken Lo Mein Recipe

Just saute onion, garlic, and ginger add sliced breast chicken and add all your fresh vegetables like sliced fresh mushrooms, bok choy, baby corn, and shallots. Add your sauce and noodles. The difference between Lo mien and Chow mein is just the noodles. Lo mein noodles are boiled while chow mein uses crispy fried noodles. But both are wheat-flour egg noodles.

Chicken can be substituted with lean pork, beef, or prawns/shrimp.

How to make Chicken Lo Mein

Ingredients

  • 500 g chicken breast fillet cut into strips
  • 200 g mushroom sliced
  • 125 g baby corn
  • 2 bunch of bok choy ends cut
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 Tbsp vegetable oil
  • 1/2 cups chicken stock
  • 500 g fresh egg noodles (check packet instructions)
  • 1/2 cup chicken stock
  • 2 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • Salt and pepper to taste
  • ¼ cup shallots chopped
  • 2 chopped chilies - optional

Instructions

  • In a small bowl, marinate the thinly sliced chicken breasts with soy sauce and let them sit for about 10 minutes.
  • Heat one tablespoon of vegetable oil in a wok over medium-high heat. Add the marinated chicken and stir-fry until it's cooked through and slightly browned. Remove the chicken from the skillet and set it aside.
  • In the same wok, add another tablespoon of vegetable oil and sauté the onion until translucent, add minced garlic and grated ginger until fragrant.
  • Add the mixed vegetables to the skillet and stir-fry them until they're crisp yet tender. This should take about 3-4 minutes, depending on the thickness of the vegetables.
  • Return the cooked chicken to the skillet with the vegetables. Add the oyster sauce and sesame oil. Toss everything together to coat the chicken and vegetables evenly.
  • Finally, add the cooked lo mein noodles to the skillet and toss them with the chicken and vegetables until everything is well combined and heated through.
  • Serve your homemade chicken lo mein in bowls or on plates, garnishing with sliced green onions and a sprinkle of sesame seeds for an extra touch of visual appeal and flavor.
