How Bake Healthy Beef and Veggie Meatballs Recipe

Ingredients

  • 1 kg beef minced
  • 1 carrot minced
  • 2 stick celery minced
  • 1/2 cup red capsicum chopped finely
  • 1 onion minced
  • 4-5 cloves garlic minced
  • 1 egg
  • 1 c breadcrumbs
  • 2 tsp salt
  • ½ tsp ground pepper
  • 1 T of Italian herbs

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the lean ground beef, minced vegetables, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix everything together until well combined. Feel free to use your hands for this step to ensure the ingredients are evenly distributed.
  • Shape the mixture into meatballs of your desired size. If you want to hide the veggies from picky eaters, make sure to finely mince all the vegetables. If you prefer a pop of vibrant color, finely chop a red bell pepper and mix it into the meatball mixture.
  • Place the meatballs on the prepared baking sheet, leaving a bit of space between each one.
  • Bake the meatballs in the preheated oven for about 20-25 minutes or until they are cooked through and lightly browned on the outside.
  • Once the meatballs are done, remove them from the oven and let them cool slightly.
