Creamy Chicken Mushroom Fettuccine

This simple and easy recipe, Creamy Chicken Mushroom Fettuccine, is a great meal for a busy weeknight. Ready in just 30 minutes and you have special and delicious meal for the whole family or friends.

Weekdays is busy for me working full time and at the same time trying to prepare a meal for my family. I always scavenge the pantry, the fridge when I don't feel like going to the supermarket. But as always I manage to create a delicious meal just out of the pantry and what ever is left over vegetables or meat I can scavenge.

With this recipe, you can substitute chicken with beef or you can just have the creamy mushroom over your pasta, you won't even tell the difference with or without chicken or beef, it still taste divine.

If you don't have any thickened cream you can substitute it with evaporated milk with this recipe. You can also use different kind of pasta or serve with steam rice or brown rice.

How to make Creamy Chicken Mushroom Fettuccine

Ingredients

  • Fettuccine pasta cooked
  • 500 gram chicken breast sliced into strip and seasoned with salt and pepper
  • 250 gram button mushroom sliced thinly
  • 1 can Campbell's Cream of Mushroom condensed soup
  • 1/2 cup thickened cream
  • 1 onion thinly sliced
  • 3-4 gloves minced garlic
  • salt and pepper to taste
  • 2-3 tablespoon olive oil
  • Fresh parsley chopped - optional
  • Grated parmesan cheese

How to cook Creamy Chicken Mushroom

  • In a wok heat oil, fry chicken breast sear both side until golden brown. Remove and set aside.
  • Add onion and garlic into the wok fry until onion become translucent.
  • Add the fresh mushroom cover and let it cook for 3 minutes.
  • Add cream of mushroom let it simmer for 2 minutes while stirring occasionally.
  • Add thickened cream simmer for another 2 minutes.
  • Seasoned with salt and pepper .
  • Garnish with parmesan cheese and fresh parsley.
  • Serve with cooked fettuccine pasta or steam rice.
  • Add some cooked peas or corn on the side.

Note: With this recipe you can leave the chicken and continue adding the other ingredients until its cook. No need to remove the chicken.
