Easy Beef Stir Fry with Mushrooms

Beef stir fry with mushrooms and cashews is another simple and easy recipe for a busy night and a budget-friendly meal. Better than takeaway food. Adding extra vegetables like broccoli, carrots, and any veggies that you have in your fridge add them in you will have a healthy meal. Toasted cashews give extra flavor to your stir fry, just make sure to toast for a few minutes to bring out the beautiful taste of the cashew nuts.

Stir fry is a versatile dish that you can't go wrong with. Add any meat like beef, chicken, pork, and even seafood. And I've been making a lot of stir fry dishes lately, just using up some of the vegetables waiting to be cooked for the weekdays. A sprinkle of toasted sesame sitting in the cupboard can be added as well for an extra nutty flavor.

Stir fries are great for meal prep, just prepare all your menu plans during the weekend. Pre-pack in your lunch box and just reheat and you will have a delicious packed lunch better than a takeaway.
