Healthy Chicken Macaroni Soup
Healthy chicken macaroni soup or chicken sopas, a Filipino soup. This is often requested during rainy season or cooler months. Easy to make and very economical and all ingredients should be available in your refrigerator and pantry.
Normally chicken macaroni soup or sopas should be creamy, the recipe includes evaporated milk and also chopped red sausage to this soup. And I want my soup lighter and hearty and I cook it without the milk.
Best serve chicken macaroni soup or chicken sopas with bread rolls or pandesal.
Garnish your chicken macaroni soup or sopas with chopped spring onion and season with freshly grind peppercorn.
How to make healthy chicken macaroni soup
Ingredients to make chicken macaroni soup
- 500 grams chicken breast
- 1.2 litres water
- 1 onion, finely chopped
- 1 ½ cups uncooked macaroni
- 1 cup carrot, finely diced
- 1 cup celery, finely diced
- 2 cups cabbage sliced thinly
- ½ cup red capsicum chopped into small cubed
- 2 chicken stock cubes
- Salt and freshly grind pepper corn
Instruction to cook healthy chicken soup
- Place the chicken breast in a large pot, add the water and bring to a simmer. Cook for 20 minutes. Skim any scum from the surface.
- Remove the chicken from the stock, let it cool and slice thinly or shred the chicken. And set aside.
- Continue to simmer the stock, add macaroni, chicken cubes, onion, carrots, celery and simmer for 6 to 8 minutes.
- Add the shredded chicken and cabbage simmer for 2-3 minute.
- Lastly add the red capsicum let it simmer for another one minute.
- Season with salt and freshly grind peppercorn.
To make soup creamy add cream or evaporated milk.
