How to bake coconut and macadamia cookies

Ingredients:

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups desiccated coconut
  • 1 teaspoon salt
  • 1 ½ cup white sugar
  • 2 eggs
  • 1 cups butter softened
  • 1/2 cup coarsely chopped macadamia nuts
  • 1 Tbsp lemon zest optional

Instructions:

  • Preheat the oven to 180°C. Line cookie sheets and set aside.
  • Sift together flour, baking powder, baking soda and salt into a large bowl and set aside.
  • In another bowl, beat butter and sugar with electric mixer until light and fluffy.
  • Add eggs and lemon zest until well blended.
  • On low speed, beat in sifted dry ingredients, coconut and macadamia until well blended.
  • Scoop cookie dough using an ice scream scoop into prepared cookie sheets, 2 inches apart.
  • Bake for 12-15 minutes or until golden brown.
  • Transfer to cooling rack to cool.
  • Store in an airtight container.
  • Makes about 24.
